This Raw Greek Carob Honey is a beautiful, deep-tasting tree honey, with a warm chocolatey flavour and a hint of smoky wood. We've been searching for a good quality Carob honey for a while and we are truly delighted to discover this Carob Honey from Kostas.

It comes from Carob trees on the Island of Crete. The bees feed on carob trees in the Mediterranean to produce this honey, different from the blossom honeys as it has a more complex and prominent taste.It also crystallises more quickly than some other tree honeys, and it has a lighter colour.

Colour: This particular honey is a medium brown amber shade when runny and turns to a creamy light brown when set.

Where does the honey come from? This variety of carob honey comes from the isle of Crete in Greece, a largely untouched, wild and diverse landscape.

What about the plant the honey comes from? The carob tree is a flowering evergreen tree. It is actually a member of the pea family and produces beautiful tasting legumes which are often used as a low fat chocolate substitute. The trees are male and female and occasionally hermaphroditic  Only the female trees produce the legumes. The trees flower in the late summer, early autumn. It is one of the last honeys of the year.

Common Uses: Carob honey is particularly good to use in recipes such as: glazes for meats, cakes, flapjacks, breads and teas.

Carob Honey Facts: Carob honey is a unique variety which is quite rare and difficult to find. It has beautiful dark amber colour and delicious chocolatey overtones.

Please know that raw honey does crystallise and this is a natural process that occurs mainly due to the natural glucose in raw honey.
