Origin - Spyros' olive groves are close to a place called Agios Konstanntionos in Greece, which is also not far from a pine forest where our Greek beekeeper Thomas keeps some of his hives. It's a beautiful place where there is no pollution or contamination, with sheep and goat herds roaming.
About the producer - Spyros is a 75-year-old gentleman who has a heritage that stretches back hundreds of years - giving him a wealth of experience and knowledge about how to produce the best olive oil imaginable. His olive groves have been cultivated for many many generations. Before him his father, and right back to the 16th century. Some of his trees are 500 years old and none are younger than 300 years. Spyros said that these trees have only remained productive because they have been pruned and cared for consistently since they were first planted. That is the secret to the longevity of his trees - and one of the main reasons why his olive oil is so high quality.
Storage: Keep it in a dark, cool cupboard away from the stove or other heat-producing appliances. Olive oil is ultimately perishable but has a very long life. If stored properly, this extra virgin olive oil can last up to 2 years.
