Description This all-natural honey and propolis throat syrup combines a variety of organic ingredients to make this a highly antibacterial and delicious alternative to supermarket throat syrups. This particular propolis is sourced from our beekeeper, David. Propolis is being researched for the potential development of new drugs focusing on a variety of its properties, including those for possible immunomodulatory, anti-diabetic and anti-ulcer applications. Description Antonio's Raw Organic Chestnut Honey is a deep and malty-tasting tree honey. It has a beautiful, rich and nutty flavour, which many people adore. This honey comes from bees feeding on sweet chestnut trees. It is quite different from the blossom varieties which are light and subtle - this is dark and more potent.  More on the flavour: Antonio's raw organic chestnut honey is a beautiful, deep-flavoured variety. It has slight caramel notes as well as a deep sweetness and a touch of bitterness too. The nutty flavour of the chestnut carries through as well as a taste a little similar to maple syrup but slightly more rich and malty. Chestnut can lend a bitter taste to honey but not always, it is known to be one of the most varied types of honey in taste, differing greatly from one area to another and from one season to the next. Colour of this batch : Mid to dark brown, a slight red in the light.   Where does the honey come from?  This variety of chestnut honey comes from the mountains around Burgos in northern-central Spain. His beekeeping practices and the land he has his hives on have been certified as organic by the Committee of Organic Agriculture in Madrid What about the plant the honey comes from? The sweet chestnut tree, also known as Castano in Spanish, is a large deciduous tree which produces edible nuts. The bees feed on the tree's sap and blossoms. Common Uses: Chestnut honey is particularly good to use in different recipes, such as: cakes, cookies, desert toppings, ice creams, warm honey teas, salads and meat glazes.  Also, it is delicious poured over cheeses. This is because of the rich, nutty and malty flavour it lends. More Chestnut Honey Facts: Chestnut honey is often higher in fructose than other types, this serves as good source of energy. Hence, a spoon of chestnut honey helps to relieve fatigue immediately. Please note that this current batch of Chestnut does appear to be crystalising very quickly.  If you have found that your honey has started to crystalise and you would prefer it liquid you can do this:- Put it on a radiator and drape a tea towel over the jars. Then leave it overnight. If it's not liquid by morning then leave it a little longer. You might think that the heat from this process will damage the honey - the important thing is that you don't heat the honey beyond 40 degrees (which is how hot the hive can get in the summer when the bees are at work evaporating moisture to thicken the honey). If the radiators are very hot then put something like a book under the jars and then drape a tea towel over the jars. The book will protect the honey from direct heat above 40 degrees from the radiator and the tea towel will ensure that hot air can circulate around the honey helping to liquefy it.

Discovering this Red Fir was an adventure.I'd been looking for a nice honey for a honeycomb chunk product for a couple of years. Then on a little adventure back in June (2023) the ideal honey was revealed to me. This is the story behind the honey.One evening Thomas told me 'Tomorrow we are going to Mount Kaliakouda. You are going to love it there.'So, this is the story......It was early one morning when Thomas and his Uncle Stefanos called for me from my hotel.  We headed from the plains of Thessaly towards some mountains.Stefanos was driving in his pickup truck, which was full of the aromas of honey and beeswax. Soon we were crossing gorges on the edge of the plain and then the ascent started. Through little mountain villages, we passed with old guys sitting drinking coffee and watching the world pass by.Higher and higher we went, twisting and turning through hairpin bends that sent me sliding from one side of the seat to the other. There were less and less signs of human habitation until there was just forest carpeting the mountain.After about an hour we were so high that we passed through the clouds.We stopped for a moment to take in an incredible view across the mountains with Fir trees stretching below us and in the distance a lake in a valley.Then a few minutes later we arrived at the place for the Red Fir honey. This was a real high mountain wilderness. On the road margins were a mass of wildflowers. Growing naturally, without any contamination from pesticides or herbicides. I could hear the bees busily working the Fir trees around us, flying backward and forward to the hives.This was my idea of paradise. The air was so pure, you felt a kind of mental clarity and wellness you only experience in really remote mountain places.Whilst I took photos Thomas and Stefanos checked the hives and erected a fence to keep the bears out, who of course like nothing better than a meal of bee grubs and Red Fir Honey. Then, finally after packing up their beekeeping equipment in the back of the pickup Stefanos passed me a chunk of honeycomb. It was truly superb. The most delicious honeycomb I had ever tasted. I knew at that moment that I had been presented with a real gem that would be perfect as a chunk of honeycomb set in a jar of Red Fir honey. Not only was it truly delicious but Fir honey tends to stay runny longer than most other honeys.

There is plenty of cultivated Oregano honey but finding truly Wild Oregano honey is a challenge. So I was delighted to discover Giorgios and his Wild Oregano honey. Giorgios is truly a man of nature and has found some amazing places for his bees to create honey- like the place on Mount Othrys where the Wild Oregano honey is created.This Raw Greek Wild Oregano Blossom honey is a luscious honey, extremely unique for its distinctive full, intense, slightly spicy aroma and taste. Beautiful poured over a feta cheese.More on the flavour: This honey starts off with a strong floral and herbal flavour, lengthening into a sweetness that reminds us of very sweet, sun-ripened oranges. The herbaceous notes lend an interesting, contrasting sourness to balance the sweetness of the foretaste and the spicy aroma.Where does the honey come from?:  This honey comes from Wild Oregano that Giorgios' bees collect on a mountain free from pesticides, herbicides & fungicides. This is a connoisseur variety for those with a love of unique and potent honey.  It is one of the most overt tasting varieties we have experienced! Colour: This particular honey is a very dark brown when runny with a shade of purple and a hint of deep red in the light. Where does the honey come from? This variety of Arbutus honey comes from the northern mountain ranges of Madrid in Spain known as Sierra De Guadarrama. Who produces this honey? The bees of Antonio Simone, a 4th generation beekeeper who takes pride in producing honey in a traditional way without adding or taking away anything. Antonio's hives are based in the mountain ranges north of Madrid, his beekeeping practices and the land he has his hives on have been certified as organic by the Committee of Organic Agriculture in Madrid. What about the plant the honey comes from? The Arbutus unedo bush is an evergreen, also known as modrono in Spanish and is nicknamed 'strawberry tree' due to its fruit that look a little like strawberry. However, these berries are not overly sweet, leaning more to acidic, but they are apparently very refreshing. The fruit of this bush is used in traditional Chinese medicine. Common uses: Arbutus honey is known as a gourmet honey by connoisseurs and those with adventurous tastes, so it really adds a unique flavour to dishes. Savoury foods really benefit from its rich, bittersweet taste. Arbutus honey facts: Arbutus honey is a rare variety and one of the most potent tasting types you can find. Description Antonio's dried multifloral pollen has a deep and rich taste, earthy and creamy with sweetness and hint of bitterness, very unusual the first time you have it, but you become more accustomed with it in time, tastiest mixed in warm water Colour: This particular pollen is orange and yellow and has the occasional green and red grain. What Does Multifloral Bee Pollen Taste Like?: This is an earthy and rich pollen, it has a sweet yet potent taste which is a little hard to describe. It is collected from the bees who feed on the mixed flora in the northern wilderness of Madrid. It is mostly small orange grains with occasional green and red one, it has a fairly strong taste, more potent than honey, but can be taken with warm water or a meal. Description Awarded the coveted Quality Gold Award by the 2019 London Honey Quality Competition Thomas' raw Greek fir honey starts with a mild nuttiness then explodes into a bold, juicy sweetness with hints of savoury herbs and a slight sourness in the aftertaste, similar to the sourness experienced at the end of blackstrap molasses. The taste lingers sweetly on the palate for a good time. It has grassy, herbaceous smell lingering within the honey sweetness mild and green somewhat similar to fennel or winter savoury. This Fir tree honey is harvested from altitudes of at least 1500 metres on a mountain close to Argithea in Greece. Colour: When runny, the colour of this honey is dark amber to nearly black, sometimes with a slight greenish tint. More on honeydew honey: This is a dark thick runny honey. It is known as a honeydew, because it is from the sap and resin of the tree not from flower nectar.  Honeydews are high in oligosaccharides, which are known for their prebiotic qualities- aiding digestion. About the beekeeper: It was brought to us by Thomas, a young Greek beekeeper, who is planning to take over his family's hives, which are in secluded forest glades in and around mountains of central Greece. Ok I love colostrum and the immune tree are brilliant for me ! I spend an awful lot on supplements but I always have my immune tree colostrum and it definitely improves my immune system , I suffer from Addison's ( major and total adrenal insufficiency) I don't produce any of my own cortisol and it's exhausting even with replacing with hydrocortisone as it's a fixed dose three times daily and not my body regulating the dose. However since I began to take colostrum every day I have indeed noticed some increase in stamina and definitely improved immunity. I'd highly recommend this colostrum to any one and everyone wanting that extra boost for the immune system.
