This raw Greek Sidr honey comes courtesy of Asterios, who works with a big network of artisan beekeepers. He has taken up our challenge of finding Sidr honey, following a bad year for this variety.  Recently he has found some more Sidr, through a colleague Elias. Elias, had has a store of Sidr honey, which he was holding on to. However, Asterios persuaded Elias to sell it to us, so we have bought all of it, following tests.

Elias' Raw Greek Sidr honey, is a thick honey with a rich, lavish and herbal sweet taste. It is very pleasant with a slightly sour and tangy aftertaste. It is not like dark tree honeys such as Oak or Chestnut.

The bees feed on the lavish nectar that this tree produces for a short period in the late Spring producing this legendary honey.

Colour: It has a strong burnt orange colour when runny, turning a creamy, buttery yellow when crystallised.

Where it comes from: This Sidr comes from isolated forests that stretch for miles in the north of Greece, close to Turkey.  

More on this honey: Sidr Honey is among the finest variants of honey in the world. It comes with a distinctive taste, and is known for its antibacterial qualities. This honey is considered sacred in many religions.

About the beekeeper: It was brought to us by Asterios and his friend Elias, who lives in a very wild area of Greece. His hives are situated deep in the forest, miles from places where pesticides, herbicides and fungicides. 

Please know that raw honey does crystalise and this is a natural process that occurs mainly due to the natural glucose in raw honey.
