Thomas' raw thyme honey is another beautiful raw honey from our Greek beekeeper, Thomas and his family. It has a mild and grassy foretaste like dry mountain herbs (You can really taste the thyme!), breaking into a large, fruity flavour similar to sweet and sour summer fruits such as raspberries and red currants, then dissipating quickly to a mild and clean finish. Very slight overnotes of the soft sweetness of fennel or aniseed without the strong flavour of liquorice. Strong hints of Greek mountain tea (Ironwort or Shepherd's tea).
The aroma is mellow and caramel sweet, and the mouthfeel is thick and almost oily, similar to sunflower honey.
You can see the bits in this honey - only very coarsely filtered.
Colour: This particular honey is a very light sandy brown and not transparent like other varieties.
Where does the honey come from? This variety of thyme honey comes from the mountains on the island of Euboea on the more barren slopes of the mountains that run down the centre of the island.

Then on a little adventure back in June (2023) the ideal honey was revealed to me. This is the story behind the honey.One evening Thomas told me 'Tomorrow we are going to Mount Kaliakouda. You are going to love it there.'So, this is the story......It was early one morning when Thomas and his Uncle Stefanos called for me from my hotel. We headed from the plains of Thessaly towards some mountains.Stefanos was driving in his pickup truck, which was full of the aromas of honey and beeswax. Soon we were crossing gorges on the edge of the plain and then the ascent started. Through little mountain villages, we passed with old guys sitting drinking coffee and watching the world pass by.Higher and higher we went, twisting and turning through hairpin bends that sent me sliding from one side of the seat to the other. There were less and less signs of human habitation until there was just forest carpeting the mountain.After about an hour we were so high that we passed through the clouds.We stopped for a moment to take in an incredible view across the mountains with Fir trees stretching below us and in the distance a lake in a valley.Then a few minutes later we arrived at the place for the Red Fir honey.
This was a real high mountain wilderness. On the road margins were a mass of wildflowers. Growing naturally, without any contamination from pesticides or herbicides. I could hear the bees busily working the Fir trees around us, flying backward and forward to the hives.This was my idea of paradise. The air was so pure, you felt a kind of mental clarity and wellness you only experience in really remote mountain places.Whilst I took photos Thomas and Stefanos checked the hives and erected a fence to keep the bears out, who of course like nothing better than a meal of bee grubs and Red Fir Honey. Then, finally after packing up their beekeeping equipment in the back of the pickup Stefanos passed me a chunk of honeycomb. It was truly superb. The most delicious honeycomb I had ever tasted. I knew at that moment that I had been presented with a real gem that would be perfect as a chunk of honeycomb set in a jar of Red Fir honey. Not only was it truly delicious but Fir honey tends to stay runny longer than most other honeys.

What makes Vanilla Fir special?
It also has a much lower level of sugars than other honeys, being particularly low in glucose meaning it usually never crystallises.
Vanilla Fir only comes from the region of Mount Mainalo in the Peleponnese in Greece, no where else in the world.
It isn't produced every year. 2019 is a good year but other years there is little or none available.
This honey is exceptionally low in moisture - just over 14% (we had our batch analysed).
It is the only Greek honey with Protected Designation of Origin - this is the only place in the world you will find this honey.
This is a honey that I thought we would never find - it is very rare and very highly valued and stock is normally snapped up in advance. However, this year has been a good year for honey (so there is more available) and Thomas has persuaded his cousin/friend Giotis (never quite sure of the distinction in Greece, Thomas seems to have a lot of cousins!).
Giotis lives close to Mount Mainlo and has agreed to supply some Vanilla Fir via Thomas. So that is how we are able to introduce Vanilla Fir to you from the Black Fir tree that grows on Mount Mainalo in the Peleponnese in Greece. I wouldn't normally sell honey from a beekeeper I haven't met but Thomas has vouched for him and I have had the honey analysed (and that's all good, no heating and it has all the key characteristics of a Vanilla Fir). This honey has been granted Protected Designation of Origin, because of its uniqueness and rarity. It comes from no where else in the world apart from the area around Mount Mainalo.
