That was this Spring (2022) when I discovered this Wild Oregano honey on a honey trip to Greece. I had been seeking Wild Oregano for a while. There is plenty of cultivated Oregano honey but finding truly Wild Oregano honey is a challenge. So I was delighted to discover Giorgios and his Wild Oregano honey. Giorgios is truly a man of nature and has found some amazing places for his bees to create honey- like the place on Mount Othrys where the Wild Oregano honey is created.This Raw Greek Wild Oregano Blossom honey is a luscious honey, extremely unique for its distinctive full, intense, slightly spicy aroma and taste. This raw Greek Sidr honey comes courtesy of Asterios, who works with a big network of artisan beekeepers. He has taken up our challenge of finding Sidr honey, following a bad year for this variety. Recently he has found some more Sidr, through a colleague Elias. Elias, had has a store of Sidr honey, which he was holding on to. However, Asterios persuaded Elias to sell it to us, so we have bought all of it, following tests.
Elias' Raw Greek Sidr honey, is a thick honey with a rich, lavish and herbal sweet taste. It is very pleasant with a slightly sour and tangy aftertaste. It is not like dark tree honeys such as Oak or Chestnut.
The bees feed on the lavish nectar that this tree produces for a short period in the late Spring producing this legendary honey.
Colour: It has a strong burnt orange colour when runny, turning a creamy, buttery yellow when crystallised.
Where it comes from: This Sidr comes from isolated forests that stretch for miles in the north of Greece, close to Turkey.

This Raw Greek Carob Honey is a beautiful, deep-tasting tree honey, with a warm chocolatey flavour and a hint of smoky wood. We've been searching for a good quality Carob honey for a while and we are truly delighted to discover this Carob Honey from Kostas.
It comes from Carob trees on the Island of Crete. The bees feed on carob trees in the Mediterranean to produce this honey, different from the blossom honeys as it has a more complex and prominent taste.It also crystallises more quickly than some other tree honeys, and it has a lighter colour.
Colour: This particular honey is a medium brown amber shade when runny and turns to a creamy light brown when set.
Where does the honey come from? This variety of carob honey comes from the isle of Crete in Greece, a largely untouched, wild and diverse landscape.
What about the plant the honey comes from? The carob tree is a flowering evergreen tree. It is actually a member of the pea family and produces beautiful tasting legumes which are often used as a low fat chocolate substitute. The trees are male and female and occasionally hermaphroditic Only the female trees produce the legumes. The trees flower in the late summer, early autumn. It is one of the last honeys of the year.

This Raw Greek Oak and Chestnut Honeycomb is perfect for those who love dark, strong honeys. Honeycomb is the best way to eat honey because honeycomb is the honey exactly as it was in the hive. It contains all the good nutritious bits - such as bee bread (fermented pollen mixed with honey and enzymes), royal jelly and propolis in the cells.
More on the flavour: This is a beautiful combination of the flavours of Oak and Chestnut honey. It starts with a dark, black tea tannin-like foretaste, easing into a very sweet and delicious main taste. It has a certain bitterness along with caramel notes coming in around an essence of deep, black raisins and prunes, leaving a slightly ferrous tingle on the tongue.
Oak honey is a very deep and rich tasting tree honey; it has a fruitiness as well as a deep woody flavour. Tree honey tends to be dark, have a stronger flavour and are less likely to set due to a relatively low glucose content.

Asterios raw organic arbutus honey is an incredibly deep tasting type. It is quite bitter, like roasted coffee beans and bitter dark chocolate. It has a beautiful after taste, but many are put off by its medicinal main flavour. This is a connoisseur variety for those with a love of unique and potent honey. It is one of the most overt tasting varieties we have experienced!
Colour: This particular honey is a very dark brown when runny with a shade of purple and a hint of deep red in the light.
Where does the honey come from? This variety of Arbutus honey comes from the northern mountain ranges of Madrid in Spain known as Sierra De Guadarrama.
Who produces this honey? The bees of Antonio Simone, a 4th generation beekeeper who takes pride in producing honey in a traditional way without adding or taking away anything. Antonio's hives are based in the mountain ranges north of Madrid, his beekeeping practices and the land he has his hives on have been certified as organic by the Committee of Organic Agriculture in Madrid.
What about the plant the honey comes from? The Arbutus unedo bush is an evergreen, also known as modrono in Spanish and is nicknamed 'strawberry tree' due to its fruit that look a little like strawberry. However, these berries are not overly sweet, leaning more to acidic, but they are apparently very refreshing. The fruit of this bush is used in traditional Chinese medicine.
Common uses: Arbutus honey is known as a gourmet honey by connoisseurs and those with adventurous tastes, so it really adds a unique flavour to dishes. Savoury foods really benefit from its rich, bittersweet taste.
