This raw Greek Sidr honey comes courtesy of Asterios, who works with a big network of artisan beekeepers. He has taken up our challenge of finding Sidr honey, following a bad year for this variety. Recently he has found some more Sidr, through a colleague Elias. Elias, had has a store of Sidr honey, which he was holding on to. However, Asterios persuaded Elias to sell it to us, so we have bought all of it, following tests.
Elias' Raw Greek Sidr honey, is a thick honey with a rich, lavish and herbal sweet taste. It is very pleasant with a slightly sour and tangy aftertaste. It is not like dark tree honeys such as Oak or Chestnut.

Where it comes from: This Sidr comes from isolated forests that stretch for miles in the north of Greece, close to Turkey.

Antonio - Organic Bee Pollen - 225g (Fresh, Raw, Organic) (stored frozen)
£25.99
Description
Antonio's fresh organic multifloral pollen is frozen right out of the hive. This is the best way to have pollen unless you have your own hives. Bee pollen contains a wide variety of long-chain fatty acids, vitamins, minerals and trace elements as well as enzymes from the bees themselves. Fresh pollen has more available nutrients than dried pollen, and because it isn't hardened from being dried, the body can more readily absorb the natural goodness without needing to be reconstituted
On the flavour: This pollen has a mildly sweet taste, similar to very ripe Russet apples and raisins, but much more mild. It is very easy to enjoy from the very first time, with a pleasant flavour that does not linger overly long on the palate.
Colour: This particular pollen is bright yellow and orange with the occasional purple grains.
Who produces this pollen? The bees of Antonio Simone, a 4th generation beekeeper who takes pride in producing pollen in a traditional way without adding or taking away anything. Why Raw Honey is different to Processed Honey - Raw honey generally means the honey has not been processed, it has come from the hive to the jar with minimal interference. Most supermarket honey is highly processed to make it look more attractive. It will often have had almost all its pollen filtered out, been pasteurised at high heats and then blended with honeys from many different places. Raw honey tends to vary from batch to batch, this is because it is not processed in a factory, filtered or heated to look homogeneous, it changes with the season and climate and what the bees feed on, we will update this fact sheet according to which batch we currently have in.
Please know that raw honey does crystalise and this is a natural process that occurs mainly due to the natural glucose in raw honey.

I was born by the Mediterranean Sea and we had big rosemary bushes in the garden. We use rosemary to cook too. Rosemary-bees and honey is part of me. My first order was eclectic because I wanted to try what was on offer. My second order included 3 rosemary honey jars because I just loved it. I believe in food synergy and use honey for breakfast on organic honey with 2 tablespoons of chia seeds. The honey was luscious, thick and addictive. It is now part of my morning. Marzia
My first experience of truly delicious honey occurred when I was 18 and taking a gap year before starting university. During this time, I spent 6 weeks on Crete and had raw honey and yoghurt every day. It was extraordinary - fragrant and complex, unlike any honey I'd had before. I have tried many honeys' since and your Rosemary honey comes closest. It tastes of dry, hot sunshine and Rosemary tinged sweetness. Kelly
The rosemary honey is my favourite firstly because of the wonderful flavour. It evokes happy memories of living in Spain; warmth, sun and the enormous rosemary bush that lived outside our kitchen window. We would watch the bees merrily pollenating and wonder what it would taste like. Now we know!! Izzy
