  1. Prepare the Mixture
    In a clean glass jar, combine 2 tablespoons of prebiotic fibre (such as Prebio Plus) with the contents of 1 sachet of LR Superfood Starter. Add approximately 1.5 cups of dairy (cold, or up to 100°F/37.8°C). Whisk well to avoid clumping and ensure even distribution. Do not blend.

  2. Add Remaining Dairy
    Stir in the remainder of the dairy, leaving some headspace in the jar. Mix well for even distribution. Do not blend.

  3. Fermentation
    Cover the jar lightly with a loosely fitting lid or plastic wrap. Ferment at 100°F (37.8°C) for 36 hours, away from direct airflow and other ferments. Do not stir or open the jar during fermentation.

  4. Storage
    Once fermentation is complete, refrigerate the cultured dairy to slow down bacterial activity and preserve freshness.

  5. Reculturing
    Use a portion of your finished LR Superfood to culture subsequent batches, repeating the process several times as desired.
